How To Cook With Cannabis The Semi-Homemade Way

Sandra Lee isn't the only one who can jazz up a meal with pre-packaged items.

We’ve all been there. You or your friend make a batch of homemade weed brownies only to end up in the fetal position fixated on a TV that isn’t even turned on. Overdoing it is the most common hazard associated with homemade edibles simply because it’s nearly impossible to know exactly how much THC is in each serving. The good news? You can forgo the dangerous unknowns implicit in a jar of dark-green cannabutter by making one of these semi-homemade cannabis recipes. (Pro-tip: Use that extra cannabutter you’re too afraid to eat as a topical for achy joints. Best case you’ll feel limber and pain-free. Worst case you’ll smell like an ultra-moisturized nug.)

By taking a cue from Sandra Lee and using pre-packaged edibles to enhance your next brunch or dinner party, you can stay in control and avoid a paranoid meltdown.

Fancy Pancakes with Défoncé Chocolate

My friend made these cannabis-enhanced pancakes for brunch one morning before we proceeded to tie-dye a mountain of weathered clothes, and needless to say, they made everything magical. You could certainly go the route she did and fancify some classic Bisquick pancakes with whipped cream and Dark+ chocolate shavings. Or, if you’re feeling ambitious, you could sprinkle some Vanilla chocolate shavings over these matcha souffle pancakes.

Whichever route you go, the key is to let your guests control the exact dose they want. Break the chocolate bar up according to the lines demarcating 5mg THC servings and let your guests do the shaving directly onto their pancakes (with this teeny-tiny cheese grater perhaps?). This way, you can rest assured everyone’s getting the high they desire. And if you have any newbies at brunch, help them along by suggesting they consume half of one 5mg serving and wait at least an hour before consuming more.

Creme Brulee with Ruby Sugar

It’s one thing to indulge in a delicious creme brulee, but how about one that could help you sleep better? That’s the idea with this semi-homemade, weed-topped version. To keep it easy, try this no-bake recipe (or ready-to-go ones from Costco if you’re really feeling low-effort) and use a packet of Ruby Plus 1:1 Sugar to finish it off. Similar to the above recipe, if you’re having guests over for weedy creme brulee, let them serve themselves the exact amount they want. Luckily, one single-serving packet contains 10mg of both THC and CBD, so the balanced ratio will help mitigate any feelings of paranoia on the off-chance you do overdo it.

Elevated Appetizers with Kikoko Honey

What could be better than cheese and crackers? Cheese and crackers and weed-infused honey. Following Kikoko’s own recipe, you could drizzle two of their Buzz Honey Shots on a plate of 30 rosemary raisin crackers slathered with brie. If you do a little math and evenly distribute the honey, each cracker should come out to about 1.5mg of THC. You also can’t go wrong with some sharp cheddar on a Triscuit or bacon-wrapped, goat-cheese-filled dates drizzled with weed honey. The possibilities are truly endless. Just be sure to keep track of how many honey sticks you go through since there is 10mg of THC in each stick. My advice? Stick to one Buzz Honey Shot per cheese plate, so you can fearlessly eat a whole cheese plate by yourself.

Soothing Sundaes with Dr. Norm’s Cookies

For a decadent dessert that’ll take you maybe five minutes to make, grab your favorite pint of ice cream and a bag of Dr. Norm’s Chocolate Chip Therapy 1:1 CBD:THC cookies. These weedy Famous Amos lookalikes are tasty, consistent, and easy to crumble. Each cookie contains 10mg THC and 10mg CBD, making for a perfect balance of giggly head high and cushiony body high. So they’re really the perfect addition to a movie night in. Grab a whole cookie (or half if you’re new to the weed scene) and crumble that bad boy on top of your favorite ice cream. Top with some whipped cream and a cherry if you’re feeling traditional, or some crushed potato chips if you’re already high.

Extra Toasted Biscotti with Coda Signature Chocolate

All you have to do is drizzle storebought biscotti with cannabis-infused chocolate for a calming breakfast snack that can also double as the perfect post-dinner treat. But to avoid making weed biscottis that actually taste like weed or send you into a tizzy, go with Coda Signature. Their highly rated Cream & Crumble chocolate bar contains ten 10mg servings for a total of 100mg THC. Melt one bar in the microwave for 30 seconds at a time, stirring in between each interval, until the chocolate is melted evenly. Then drizzle evenly over 10 pieces of biscotti for roughly 10mg of THC per cookie.
